You can easily substitute beef or lamb in stead of pork for the ingredients.
Since rhubarb is a vegetable, you have two vegetable servings in this casserole!
Serve with warm dinner rolls and butter ... so yummy!
Note - This recipe works easily as well with stewing lamb / mutton or stewing beef instead of stewing pork.
3 tbsps. oil
1 pound boneless, stewing *pork
2 medium size onions, chopped
1 pound carrots, chopped
1/2 pound rhubarb, chopped
2/3 cup water
1/3 cup granulated sugar
2 tbsps. lemon juice
2 tbsps. parsley
1/4 tsp. cinnamon
1/4 tsp. nutmeg
salt to taste
pepper to taste
In a large pan, heat the oil, and add the pork and the onions, and cook till well brown on all sides.
Add the carrots, rhubarb, water, sugar, lemon juice, parsley, cinnamon, nutmeg, salt and pepper, and mix to combine.
Bring the above mixture to a boil, and then reduce heat and allow to simmer for about 1 1/4 hour, stirring from time to time.
Serve this rhubarb and pork casserole hot with dinner rolls and butter.
Did You Know?
Did you know that rhubarb is one of the very easiest vegetables to grow for the home gardener?
Growing rhubarb is frugal too!
Rhubarb is a perennial, meaning it continues to come up each year, and therefore does not need to be re-seeded each year. No need to spend money on seed.
This very versatile vegetable can grow almost anywhere on your property where it will receive sunshine.
Along a deck or fence line, or anywhere, it does not necessarily need to be grown in a vegetable garden.
If you do not grow your own rhubarb, I recommend you do ... it requires little to no maintenance, is rarely bothered by pests or disease, and provides a very large harvest a few times a year!
Rhubarb is very simple to freeze too!
Classified as a vegetable but often "treated" as a fruit, rhubarb can be used in almost any type of recipe.
