An Easy Yogurt Rhubarb Parfait recipe to make a SCRUMPTIOUS rhubarb snack or dessert that everyone will love!
Use fresh OR frozen rhubarb for this recipe!
I made this yogurt parfait for a dessert yesterday, and my daughter and husband said it tastes like "MORE"!
You can make a large quantity of the stewed rhubarb, and then use it over the course of several days, as it keeps well in the fridge.

Sliced Almonds, for garnishing (optional)
In a parfait glass, or glasses, place the yogurt and the stewed rhubarb alternately by about 1/4 cup fulls, ending and beginning with the yogurt.
Garnish the top with sliced almonds, if desired.
I used sugar free yogurt, and the stewed rhubarb with the flavoured gelatin was sweet enough to give a truly scrumptious taste!
You have left over rhubarb sauce?
Use the sauce to top ice cream, pound cake, waffles and more!
Or, if the sauce is thick enough, serve it as a side with any meal, just like applesauce!
I use this stewed rhubarb regularly as a side for any supper menu, and everyone love it!
