This Strawberry Rhubarb Bread Pudding Recipe makes a delicious pudding that will really take your taste buds for a ride!

This bread pudding recipe includes a delectable streusel topping.

To make it extra special, top it with a strawberry-rhubarb compote!


Ingredients

FOR THE STREUSEL

1/3 cup all-purpose flour
1/4 cup oats
2 tbsp. brown sugar
2 tbsp. vegetable oil
1/4 cups chopped walnuts, lightly toasted (see Tip below)

FOR THE BREAD PUDDING

4 large egg whites
4 large eggs
1 cup milk
1/2 cup granulated sugar
1 tbsp. vanilla extract
1 tsp. orange zest
4 cups whole grain "day-old" bread cubes (1" cubes)(about 5 slices)
2 cups roughly broken gingersnaps
2 cups hulled, quartered strawberries
1 cup chopped rhubarb (1/2" pieces)







Directions

FOR THE STREUSEL

In a small bowl, using a fork, mix together the flour, oats, brown sugar, and the vegetable oil until well combined and until mixture resembles coarse crumbs.

FOR THE BREAD PUDDING

In a bowl, whisk together the egg whites, eggs and milk until well combined.

Add the sugar, vanilla extract, and the orange zest, and continue to whisk to combine.

In a large bowl, combine the bread cubes, gingersnaps, quartered strawberries, and the chopped rhubarb.

Add the milk mixture, and toss well to coat the bread and the gingersnaps.

Transfer the mixture to a 9" x 13" greased baking dish, and cover with foil.

Bake at 375° F for about 40 - 45 minutes, or until the milk mixture has set.

Uncover, sprinkle the streusel mixture on top of the bread pudding, and continue to bake until the pudding is puffed and is a golden colour on top, about 15 - 20 minutes more.

Allow bread pudding to cool for about 20 minutes before serving.

Serves 8.

Baking Tip

To toast walnuts, spread the chopped walnuts on a baking sheet, and place in a preheated oven at 350° F.

Toast walnuts, (stirring/turning walnuts once), for about 7 - 8 minutes, until fragrant and lightly browned.
