This Rhubarb Upside Down Cake Recipe is a very quick and easy Rhubarb Dump Cake.
You can use either a yellow or a white purchased cake mix.
You can line the baking pan with wax paper or parchment paper to make the inverting of the cake easier.
Serve this cake with a dollop of whipped cream, ice cream, or yogurt.

3 cups chopped rhubarb (1/2" - 1" size pieces)
1 cup granulated sugar
1 (85 gram size) box strawberry flavoured gelatin (For Example: "Jello" brand)
1 (approx. 500 gram size) purchased yellow or white cake mix
Spread the rhubarb into a 9" x 13" baking pan (you can line it with waxed paper or parchment paper, to make it easier to invert later).
Sprinkle the sugar evenly over the rhubarb in the pan.
Sprinkle the flavoured gelatin over the sugar.
Prepare the cake mix according to the package instructions, and then pour it over the rhubarb in the pan.
Bake at 350° F for about 35 - 45 minutes.
Let cake set in pan for about 10 minutes after it has been removed from the oven, then invert it onto a large cake platter or tray.
Serve with a dollop of whipped cream, ice cream, or yogurt.
