This Easy Rhubarb Pudding Recipe makes a delicious warm pudding dessert with Rhubarb - a classic comfort food for sure!
I believe this is the quickest and easiest rhubarb pudding dessert EVER ... and it uses only several ingredients which everyone has in their kitchen!
Enjoy it plain ... or add a dollop of Greek Yogurt, ice cream or whipped cream!
I always LOVED it when my Mom served warm pudding after dinner because it took time to eat, which meant more time for cozy socializing with dear family!
A great way to end a relaxing meal time with family and friends.
And, remember, rhubarb is a vegetable, a nutritious choice too!
2 beaten eggs
1 cup granulated sugar
1/4 cup all-purpose flour
1 tsp. vanilla extract
4 cups chopped rhubarb
whipped cream, Greek Yogurt or ice cream (optional)
In a bowl, whisk the together the eggs, sugar, flour and vanilla, until well combined.
Gently stir in the chopped rhubarb.
Pour the mixture into a 8" x 8" greased baking dish.
Bake at 350° F for 35 minutes, or until the pudding is firm.
Serve warm with whipped cream, Greek Yogurt, or ice cream, if desired.
Serves 6 to 9.
