4 cups chopped rhubarb (1/2" - 1" size pieces)
1 1/2 cups granulated sugar (or less depending on the sweetness you prefer)
1 box - 430 gram size (approx.) yellow or white cake mix
2 cups whipping cream, not whipped
In a medium size bowl, combine the chopped rhubarb and the sugar, and allow to stand while preparing the remainder of the recipe.
In another bowl prepare the cake mix and the oil and eggs according to the directions on the cake box, but, do not add the water ingredient.
Spread the cake batter into a greased 9" x 13" baking dish.
Add the rhubarb and sugar mixture over the top of the cake batter in the dish.
Pour the whipping cream over the top of the rhubarb.
Bake at 350° F for about 45 minutes or until the cake is golden brown.
Allow to cool before serving.
If desired add a dollop of ice cream or other garnish on top before serving.
