follow two recipes for Rhubarb Cocktail Drinks, (Alcoholic Rhubarb
Drinks), to make with your rhubarb harvest.
These mixes make a pretty pink drink, and a flavour that reminds you of Spring!
Recipe #1 is a Rhubarb Spritzer, and Recipe #2 is a Rhubarb Drink with Vodka and Grand Marnier.
4 cups chopped rhubarb, (about 3 - 4 stalks)(chopped pieces of about 1/2" - 1" in size)
1 tbsp. water
2 tbsp. granulated sugar
1 750 ml. size bottle of Prosecco or Asti, chilled
Place the chopped rhubarb pieces in a food processor with the sugar and the water.
Process mixture until pureed.
Put the rhubarb mixture into a sieve, and press the juice through.
Discard the pulp (or use it for another recipe?).
Juice should measure about 1 cup.
Refrigerate for at least one hour.
Pour in prosecco just before serving.
Makes 8 - 1/2 cup servings.

2 cups rhubarb syrup, GO to How to Make Rhubarb Juice, and add more sugar, as desired for a base for this drink recipe
juice of 4 limes
mint for garnishing, (optional)
Stir the vodka, Grand Marnier, the rhubarb syrup, and the lime juice together in a large pitcher with ice.
Strain into cocktail glasses, and garnish with mint, (optional).
