This dessert uses only a few ingredients including a purchased cake mix!


Pineapple Rhubarb Dessert Recipe using Cake MixPineapple and Rhubarb Dessert

This dessert looks like a crumble recipe, but it is ten times easier and faster!

It tastes like "more"!

You can make this rhubarb dessert cake using frozen rhubarb or fresh rhubarb.

If using frozen rhubarb, thaw it, and drain the excess liquid.


Ingredients

4 cups chopped, fresh or frozen rhubarb (1/2" - 1" pieces)
1 can (14 oz. size) crushed pineapple, not drained
1 cup granulated sugar
1/4 tsp. ground cinnamon
1 pkg. (approx. 500 gram size) golden cake mix (purchased cake mix)
1 cup chopped pecans
1/2 cup cold butter

Directions

In a bowl, rhubarb, pineapple, sugar and cinnamon and mix just to combine.

Pour into a greased, 13" x 9" baking dish.

In another bowl, combine the cake mix and the pecans.

Cut in the butter using a pastry blender or a fork, until it resembles coarse crumbs.

Spread evenly over rhubarb mixture in baking dish.

Bake at 350° F for 35 - 40 minutes or until lightly browned.

Allow rhubarb dessert to cool a little before serving.

Serve with a dollop of whipping cream, whipped dessert topping, Greek yogurt, or vanilla ice cream.
