Many people think of rhubarb as a great pie filling idea, or a sauce for topping ice cream, but rhubarb is such a versatile vegetable that it can be used in hundreds of different recipe types!
Include rhubarb in your supper menu tonight!
1 1/2 cups chopped rhubarb (1/2 " pieces)
1 cup orange juice
1/4 cup honey
1/4 cup lemon juice
2 tbsps. granulated sugar
1 tsp. salt
1 tbsp. potato flour or cornstarch
3 tbsps. water
3 lbs. (approx.)chicken pieces
vegetable oil or butter
In a pan, cook the rhubarb and orange juice over medium heat until tender, (about 15 minutes).
Strain the above mixture through a sieve or cheese cloth and discard the solids.
Return the strained rhubarb to the pan, and add the honey, lemon juice, sugar and salt.
Heat over low heat and stir, until all ingredients are combined and the sugar and honey are totally dissolved.
Remove the sauce from the heat, and set aside 1/4 cup of the mixture.
In a small cup dissolve the potato flour (or cornstarch), and then stir it into the remaining sauce mixture in the pan.
Stir over low heat until the sauce thickens and remove from heat.
Preheat the oven to 350° F.
In a large skillet, over medium-high heat, brown the chicken pieces in the oil and remove them to a large casserole dish.
Pour the sauce over the chicken pieces.Bake at 350 ° F for about 40 minutes, or until chicken is done.
Remove from oven, stir the 1/4 cup of reserved sauce into the casserole dish and serve.
Serves 6 to 8.
