A Rhubarb Frozen Slush Drink Recipe

This Homemade Rhubarb Drink Recipe, with lemonade and orange juice is a very refreshing frozen drink.

After it is made, transfer it to a freezer-safe container, then, remove it about 10 minutes before using, and scrape the thawing surface to make an amazing Rhubarb Slush Drink!







If you are planning on serving a large number of people, and using this slush all at one time, then remove the container with rhubarb drink about 30 - 45 minutes before using, allowing enough time for the mixture to begin thawing.


Many people, (especially those who have a lot of rhubarb), like to use their frozen rhubarb to make frozen drink, and enjoy it all winter long.

Perhaps you too have so much rhubarb, that you will not use it all for baking and cooking, then making a rhubarb slush drink it the perfect recipe idea for you!


Ingredients

6 cups fresh or freezer rhubarb
7 cups water, divided
2 cups granulated sugar
3/4 cup orange juice concentrate
3/4 lemonade concentrate
club soda or another carbonated beverage of your choice


Directions

In a large pan, bring the rhubarb, and 4 cups of the water to a boil.

Reduce heat, and simmer, uncovered for about 10 minutes, or until the rhubarb is tender.

Mash the rhubarb with a potato masher, and strain it.

Reserve the juice and discard the pulp (or use it for another recipe?).

Add the granulated sugar, the orange juice concentrate, the lemonade concentrate, and the remaining 3 cups of water to the rhubarb juice.

Transfer to a freezer-safe container, and freeze.

When you are ready to have some rhubarb drink, remove the frozen slush from the freezer about 10 minutes before hand. If you plan to serve all the rhubarb drink at one time, then you will need to remove the frozen slush from the freezer about 30 - 45 minutes before hand, to allow the mixture to begin the thawing process.







Scrape the surface of the thawing slush, (I like to use an ice cream scoop), place the slush into a glass, and add an equal amount of carbonated soda, or another carbonated beverage of your choice.

Note - If you are not using all the frozen rhubarb slush in the container at one time ... immediately return the container to the freezer, and repeat the serving process when you crave another refreshing and healthy frozen drink.

Serve immediately with a straw and spoon.

Serves 10.
