Not only do cookies made with rhubarb taste amazing, they also have great eye appeal.

The "rosy red" rhubarb gives the cookies that pink/red added colour, enough to brighten any platter or tray of baking!

These cookies are unique additions to home-baking treat displays, and you will be sure to have recipe requests and accolades from guest and family alike, about these cookies!!

Even people who may claim that they do not care for rhubarb will be amazed at the awesome taste of cookies made with this sweet /tart vegetable.

In fact, you may have to hide part of the batch of cookies you make, just to be sure those very recipients of your cookies do not eat them all! :)

Cookies are commonly enjoyed at any time of the day - coffee breaks, as a snack, for dessert, and even presented as a welcoming gift.

Cookies made with rhubarb make great kid's snacks for school lunches too! Imagine ... cookies made with a vegetable! Rhubarb is a veggie after all!

If you are wondering what to make with your rhubarb, why not try a batch of homemade cookies? You will be glad you did!

Most rhubarb cookie recipes are the "drop style" cookies.

Drop cookies are baked on a cookie sheet by dropping the prepared dough onto the cookie sheet using two dessert size spoons. It is important to remember to allow ample room for the cookies to spread during baking.

Have you ever had the disappointment of baking cookies that spread too much, even blending together on the cookies sheet, resulting in extremely flat cookies?

You can prevent excess spreading of cookies by chilling the dough, mounding the dough when "dropping" it, and baking it at the correct temperature for the entire baking time (be sure to pre-heat the oven).

Remove baked cookies from the cookie sheet, and allow them to cool on a wire rack.

When storing drop cookies, be sure not to mix soft style cookies with crisp style cookies. Mixing these two types of cookie will result in the crisp variety becoming undesirably soft.
