Most often rhubarb is baked into pies, tarts, muffins, breads, cakes and other fabulous desserts, but how often have you enjoyed rhubarb in a SAVOURY dinner dish?







Rhubarb pairs very well with meat - chicken, pork, lamb, and also with fish.

Ingredients

5 1/2 pound whole chicken, cut into eight pieces.
1 tbsp. plus 1/2 tsp. salt
1 tsp. ground pepper
5 sprigs thyme (lemon if possible)
2 tbsp. olive oil
1 bunch spring onions or scallions (white and light green stalks) thinly sliced (slice the greens for garnish)
2 garlic cloves, minced
1/2 dry white wine
3 cups chopped rhubarb (1/2" pieces)
1 tbsp. liquid honey
2 tbsp. butter, cut into pieces


Directions

Using paper-towel pat the chicken dry and season with the 1 tbsp. salt and the pepper.

Place the chicken pieces in a bowl with the thyme sprigs, cover and store in the refrigerator at least one hour, of over-night.

Heat the oil in a large skillet over medium-high heat.

Remove (and reserve) the thyme from the chicken pieces in the bowl, and add the chicken to the skillet, searing the chicken, turning occasionally, until golden brown on all sides (about 10 minutes).

Transfer chicken pieces to a plate.

Reduce heat to medium and stir in the white and light green parts of the onion, and cook until softened (about 5 minutes).

Add the garlic and the reserved thyme to the skillet and cook for one minute more.

Stir in the wine and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.

Add the chopped rhubarb, honey, the remaining 1/2 tsp. salt and a dash of pepper.

Return the chicken pieces to the skillet in a single layer.

Cover and reduce heat to medium-low.

Simmer until chicken is cooked through (about 20 to 25 minutes), transferring pieces of chicken to a plate as they are finished cooking.

Whisk butter into the rhubarb sauce.

Taste and adjust seasoning of sauce as desired.

Spoon the rhubarb sauce over the prepared chicken and garnish with the sliced onion greens.
