This recipe makes the most delicious rhubarb strawberry squares.

Everyone will love these rhubarb bars - even those who do not require a gluten-free diet - THEY won't even suspect these rhubarb treats are gluten-free!;)

You can use fresh or rhubarb from your freezer for these rhubarb squares.

If you are using frozen rhubarb, thaw it the night before, on the counter, in a sieve over a bowl.

Discard the excess liquid.

You may need to thaw slightly more rhubarb than the ingredient list calls for, since the rhubarb tends to "shrink" after it has thawed.







Ingredients

FOR THE BASE

2 cups gluten-free all-purpose flour
1 tsp. baking powder
1/2 cup cold butter
2 medium eggs, lightly beaten
3 tbsp. milk
5 cups chopped fresh or frozen rhubarb
1 pkg. - (3 oz. size) strawberry gelatin (Example: "Jello")

FOR THE TOPPING

1 cup granulated sugar
1 cup gluten-free all-purpose flour
1/2 cup cold butter


Directions

FOR THE BASE

In a large bowl, whisk together the flour and the baking powder.

Using a pastry cutter or a fork, cut in the butter until the mixture resembles coarse crumbs.

Add the eggs and the milk and stir the mixture just until moistened. Do not over-mix.

Press the mixture into a greased 9" x 13" baking dish.

Spread the chopped rhubarb evenly over the base.

Sprinkle the strawberry gelatin evenly over the rhubarb.

FOR THE TOPPING

Combine the sugar and the gluten-free flour in a small bowl.

Using a pastry cutter or a fork, cut in the butter, until the mixture resembles coarse crumbs.

Sprinkle the topping over the base in the baking dish.

Bake the bars at 350° F for about 35 - 40 minutes, or until lightly browned.

Allow the bars to cool, and then cut into squares.

Makes about 18 delicious rhubarb bars, **gluten-free!
